4 Pepper Pork Stew
This was an experiment I did with a pressure cooker.
- Ingredients:
 - 3 med onions, sliced
 - 4 green bell peppers, coarse chopped
 - 4 hatch peppers sliced into 2" strips
 - 1-1/2 lb pork loin, cut into ~ 2" chunks
 - 1 celery stalk, chopped
 - 2/3 cup chicken stock
 - 1/3 cup dark beer
 - 5 cloves garlic, chopped
 - 2 portabella mushroom caps, sliced.
 - 1 tsp white sugar
 - 3 tbsp butter
 - juice from 1/2 lemon
 
- Spices:
 - 1 tbsp fresh ground black pepper
 - 1 tsp crushed red pepper
 - 1 tsp coleman's dry mustard (hot mustard)
 - 1 tsp paprika
 - 1 tbsp oregano
 - 2 tsp cumin
 - 2 tsp turmeric
 - salt (to taste usually ~ 1- 2 tsp)
 
This is surprisingly hot.
