4 Pepper Pork Stew

This was an experiment I did with a pressure cooker.

Ingredients:
  • 3 med onions, sliced
  • 4 green bell peppers, coarse chopped
  • 4 hatch peppers sliced into 2" strips
  • 1-1/2 lb pork loin, cut into ~ 2" chunks
  • 1 celery stalk, chopped
  • 2/3 cup chicken stock
  • 1/3 cup dark beer
  • 5 cloves garlic, chopped
  • 2 portabella mushroom caps, sliced.
  • 1 tsp white sugar
  • 3 tbsp butter
  • juice from 1/2 lemon
Spices:
  • 1 tbsp fresh ground black pepper
  • 1 tsp crushed red pepper
  • 1 tsp coleman's dry mustard (hot mustard)
  • 1 tsp paprika
  • 1 tbsp oregano
  • 2 tsp cumin
  • 2 tsp turmeric
  • salt (to taste usually ~ 1- 2 tsp)

This is surprisingly hot.
